Baked Cinnamon Oatmeal

*Prepare the night before!


3 cups rolled oats
1 cup Sucanat sugar (healthier than brown sugar)
2 tsp, ground cinnamon
2 tsp. aluminum-free baking powder
1 tsp. sea salt
2 cups milk
2 eggs
1/2 cup unsalted butter, melted
2 tsp. pure vanilla extract
3/4 cup fresh blueberries OR dried cranberries OR raisins

In a large bowl, mix all dry ingredients together. Stir in milk, eggs, butter, and vanilla. Stir in fruit.

Spread into greased 9 x 9 square baking dish. Cover and place in fridge over night. (This allows the oats time to soak up all the liquid.)

The next day, preheat oven to 350 degrees F. Bake ,uncovered, for 40 minutes.

Tip: To double recipe, use 9 x 13 baking dish.
