Banana Bread

1 1/2 cups whole wheat flour
1 1/2 tsp. aluminum-free baking powder
1/4 tsp. baking soda
1/4 tsp. ground cinnamon
1/8 tsp. sea salt
1 egg
1 cup mashed ripe banana (3 medium sized)
3/4 cup granulated sugar or Honey Granules
1/4 cup olive oil
1/2 cup chopped walnuts or pecan (optional)

Preheat oven to 350 degrees F.

Grease bottom and 1/2 up the sides of a 8x4x2 loaf pan. Combine flour, baking powder, baking soda, cinnamon, and salt. Make a well in the center of the dry mixture and set aside.

In another bowl combine the egg, bananas, sugar and oil. Add to dry mixture and stir until moistened. Fold in nuts, if desired.

Spoon batter into loaf pan. Bake for 50 min., or until toothpick inserted near middle comes out clean. Cool pan on wire rack for 10 min., then remove loaf from pan and cool completely. May serve warm.

Tip: Try folding in 1/3 cup of semi-sweet chocolate chips, for more of a dessert bread!
