Better Cheddar Dip
1 Lb. sharp white cheddar cheese
2-3 green onions, chopped
1 cup walnuts, chopped
1-1/2 cup olive oil
3 Tbsp. onion, chopped
1 Tbsp. creole mustard
3 Tbsp. white vinegar or lemon juice
1/4 tsp. paprika
Dash of Tabasco sauce
1 tsp. prepared mustard
1 tsp. sea salt
Grate cheese in food processor. Transfer to a large bowl and add green onion, and walnuts to the bowl. Set aside.
Using food processor again, make Mayo Mixture by putting 1/4 cup oil in food processor. Add remaining Mayo Mixture ingredients and blend on high speed until smooth. Immediately add remaining oil, drizzling a little at a time, until all is used and mayo is well blended.
Add mayo mixture to cheese mixture and stir to blend well.Keep refrigerated.
Serve with wheat thin crackers.
