Cowboy Tator Tot Casserole

"Favorite Recipe", submitted by Heidi Wiersma

1 Lb. lean ground beef
15.25 oz. canned unsalted corn kernels, drained
10.5 oz. cream of chicken soup
1 cup shredded cheddar cheese, divided
2/3 cup milk
1/4 cup sour cream
1-1/2 tsp. onion powder
1/2 tsp. black pepper
32 oz. bag frozen tator tots, divided

Preheat oven to 375 degrees F.

In a large skillet, cook beef until done; drain grease and return to pan. Turn off heat. Stir in corn, soup, 1/2 cup cheese, milk, sour cream, onion powder, and pepper.

Place 1/2 of the tator tots in a single layer, in a greased 9 x 13 baking dish. Top with beef mixture. Place remaining tator tots on top, in a single layer. Sprinkle with remaining 1/2 cup of cheese.

Bake, uncovered, for 20-25 minutes, or until bubbly.

Tip: Try substituting the original-flavored Tator Tots for the Alexia brand Sweet Potato Tator Tots! Gives the dish a sweeter feel.
