Egg Biscuit Cups

A quick and easy breakfast for on-the-go!

1 (16 oz.) canned regular size biscuits (8 to a can)
3 eggs, beaten
1/4 cup cheddar cheese, grated
2 slices cooked turkey bacon, chopped (optional)
2 Tbs. green onion, chopped (optional)
Sea salt and black pepper, to taste
Salsa for dipping (optional)

Preheat oven to 350 degrees F. Grease standard size muffin pan.

Press biscuits into bottom of pan, molding up the sides to make a "cup" shape.

In a medium-size bowl, whisk eggs, bacon, onion, salt, and pepper. Pour equal amounts of egg mixture into center of each molded biscuit. Don't fill these to the very top, as egg will rise during baking. Sprinkle tops with cheese.

Bake, uncovered, for 25-30 minutes, or until egg is cooked and biscuits are golden.

Tip: Change these up by adding various fillings to the beaten eggs. You can add anything that you would typically put in an omelet!

Makes 8 biscuits
