A blend of pepperoni pizza & spaghetti...a kids favorite!
1 Lb. whole wheat linguine or fettucini pasta, cooked
26 oz. jar traditional spaghetti sauce
8 oz. shredded sharp cheddar cheese
6 oz. fresh shredded Parmesan cheese
4 oz. pkg. mini pepperoni (I prefer turkey pepperoni)
6 Tbs. butter
1/2 cup flour (can substitute for whole wheat flour)
1 cup cold milk
Preheat oven to 350 degrees F.
In a large pan, melt butter over medium heat. Whisk in flour, stirring constantly for 2 minutes. Slowly add milk, whisking until smooth and thick.
Add pasta sauce, and cheeses to mixture. Cook until cheese is completely melted, stirring often. Stir in cooked pasta.
Spoon into a greased 13 x 9 baking dish. Cover with foil. Bake for 40 minutes. Uncover and top with pepperoni. Bake an additional 10 minutes.
