Spinach Squares

Straight from my grandma's kitchen!

2 Tbs. butter
3 eggs
1 cup milk
1 cup flour (can substitute for whole wheat flour)
1 tsp. aluminum-free baking powder
1/2 tsp. dried thyme
1/2 tsp. nutmeg
1/4 tsp. salt
1/4 cup yellow onion, chopped
3/4 Lb. grated Monterey Jack cheese
2 (10 oz. each) packages frozen chopped spinach, thawed, and drained thoroughly

Preheat oven to 350 degrees F.

Melt butter and coat bottom of a 9 x 13 inch baking pan with it.

In a large bowl, lightly beat eggs. Add milk, flour, baking powder, spices, and salt. Stir in spinach, cheese, and onions.

Pour into prepared pan.

Bake 35 minutes, uncovered. Let it set before cutting into squares.
