Whole Wheat Irish Soda Bread

A heavy, yet moist bread!

4 cups (plus extra for kneading) whole wheat flour
1 tsp. sea salt
1/2 tsp. aluminum-free baking soda
2 Tbs. honey
1-1/2 cups whole buttermilk

Preheat oven to 375 degrees F.

In a large bowl, combine dry ingredients. Stir in honey and buttermilk. *Add more flour (if needed) to make a soft dough. Knead slightly on a floured surface. Dough should be only slightly sticky.

Shape into a round 1-1/2 inch thick loaf. Using a knife, slash an X across the top.

Bake on a greased cookie sheet for 40-45 minutes. Cool on a baking rack.

Tip: Bread may look dry and hard when you first take it from oven. Once it sits for an hour or more, it will soften up some. The inside will be moist. This is a natural heavy bread, so slice it thin upon serving. Serve with butter.
