1 Lb. lean ground beef
2 slices (1/2 cup) whole wheat bread, crumbled in food processor1-1/2 tsp. dried parsley
1/4 tsp. sea salt
1/2 tsp. dried oregano
1 Tbs. Parmesan cheese, finely shredded
1/3 cup yellow onion, finely chopped
1 clove fresh garlic, minced
2/3 cup cold milk
1 egg, slightly beaten
2 Tbs. Dijon mustard
1 Tbs. Worcestershire sauce
Ground black pepper, to taste
1/4 cup ketchup
Preheat oven to 350 degrees F.
In a large bowl, mix bread crumbs, parsley, salt, oregano, cheese, onion, and garlic.
Next, add the beef, milk, egg, mustard, Worcestershire sauce, and pepper. Using your hands, combine all ingredients until blended. Don't over mix.
Place the meat mixture in a loaf pan or in a 8 x 8-inch baking pan, and shape into a loaf. Spread the ketchup over the top.
Bake, uncovered, for 1 hour, or until center is no longer pink. Cool 5 minutes before slicing.
Tip: You can also add 1 carrot, finely shredded, to your meatloaf mixture. If substituting ground turkey for the ground beef, please note that it will make a slightly drier meatloaf.
