I don't know how or even why, but I always make a big deal out of holidays that don't pertain to me--Cinco de Mayo, Chinese New Year, Mardi Gras. I think it is just an excuse for me to make special foods, as everything revolves around food in our house! Any-who, here are some of our favorite Mexican dishes, we have made over the years, just in time for Cinco de Mayo!
