*Prepare Avocado Salsa a minimum of 2 hours before needed.
4 Mahi Mahi fillets (about 12 oz. total) thawed, boneless, skinless
1 large tomato, seeded and chopped
1 ripe avocado, halved, seeded, peeled, and chopped
1/4 cup red onion, finely diced
1 whole fresh garlic clove, finely minced
1 Tbs. fresh cilantro, stems removed
1 Tbs. fresh squeezed lemon, seeds removed
1/4 tsp. sea salt
A few dashes ground black pepper
To prepare Avocado Salsa:
In a medium size bowl combine tomato, avocado, onion, garlic, cilantro, lemon juice, salt, and pepper. Gently mix. Cover and chill for 2 to 6 hours.
To prepare fish:
Place fillets in a oiled shallow baking pan. Bake, uncovered, at 400 degrees F. for 10 to 15 minutes, or until easily flaked with a fork.
Remove fish from oven and serve topped with the fresh Avocado Salsa.
Tip: You can also use Halibut for this recipe.
