A quick and easy dish, with bold flavors!
13 oz. box of whole wheat angel hair pasta
2 whole ripe avocados, peeled and seeded
1/4 cup fresh squeezed lemon juice, seeds removed
2 whole fresh garlic cloves
1/2 cup fresh basil leaves, stems removed
1/4 cup olive oil
1/4 tsp. sea salt
Few dashes fresh ground black pepper
1 cup cooked diced chicken (optional)
Cook pasta according to directions on box.
Meanwhile, in a food processor or blender, chop garlic until fine. Add avocados, lemon juice, basil leaves, olive oil, salt, and pepper. Blend until smooth.
Once pasta is cooked, drain and transfer to a large bowl. Pour sauce over top of pasta and gently stir to incorporate. You can add cooked diced chicken, if you desire.
