Fruity, sweet, and hearty!
2 cups old-fashioned rolled oats (not instant)
1/2 cup Sucanat sugar or light brown sugar
1 tsp. aluminum-free baking powder
1 tsp. ground cinnamon
1/2 tsp. sea salt
1/2 cup finely chopped walnuts
1-1/2 cups fresh strawberries, hulled and diced
1/2 cup semi-sweet chocolate chips
2 cups milk
1 large egg
3 Tbs. unsalted butter, melted
1 Tbs. pure vanilla extract
1 large ripe banana, cut into1/2-in slices
Preheat oven to 375 degrees F.
In a large bowl, combine oats, sugar, baking powder, cinnamon, salt, 1/2 cup walnuts, 1/2 cup strawberries, and 1/4 cup chocolate chips. Set aside.
In another large bowl, whisk milk, egg, butter, and vanilla; set aside.
Add all of the dry oat mixture to a greased 11 x 7-inch baking pan. Top with remaining 1/2 cup walnuts, 1/2 cup strawberries, and 1/4 cup chocolate chips. Place sliced bananas on the top.
Pour milk mixture slowly over the top, gently shaking pan to make sure mixture goes through oats.
Bake, uncovered, 35 to 40 minutes, or until top is golden brown and mixture set.
