Chicken Ranch BLT w/ Pepper Jack Cheese

My boys made this for dinner last night! 
It's their spin-off of a Club Sandwich. 

4 thin-cut chicken breasts
1 Tbs. olive oil
Sea salt and ground black pepper
8 slices bacon or turkey bacon
4 Kaiser rolls
4 slices Pepper Jack cheese
Tomato, sliced thick
Lettuce
Ranch dressing

In a large pan, cook bacon over medium heat, until crispy. Transfer to a paper towel-lined plate and set aside.

Heat 1 tablespoon of oil (or use the leftover bacon grease) in a large pan, over medium heat. Once hot, add chicken breasts. Sprinkle with salt and pepper. Cook each side, over medium heat, until no longer pink. Shouldn't take more than a few minutes per side, depending on how thick your meat is.

Split kaiser rolls in half. Lay them face up on a baking sheet. Place a slice of cheese on the bottom halves. Toast under the broiler for 1-3 minutes. Watch closely not to burn them!

Layer a slice of tomato, 1 chicken breast, 2 slices of bacon, and a lettuce leaf on the cheese half on the rolls. Spread ranch dressing on the top half, then place over the lettuce.

Makes 4 Sandwiches
