Classic Rice Krispy Marshmallow Treats
3 Tbs. butter
10 oz. package large marshmallows (about 40) or 4 cups mini marshmallows
1/2 tsp. pure vanilla extract
6 cups any rice cereal (such as Rice Krispies)
In a large microwave-safe bowl, melt butter and marshmallows on high for 1 minute. Stir and heat for an additional 1 minute, or until mixture is melted and smooth. Stir in vanilla.
Add cereal, stirring to coat well with a buttered spatula (mixture will be sticky). Work fast, as marshmallow mixture will set quickly! Press into a lightly buttered 9 x 13 baking pan.
Let it cool completely before cutting into bars. Cover tightly for storage.
To decorate: After mixing the melted marshmallows and cereal, let mixture cool slightly. Then, shape mixture using cookie cutters or buttered hands for free-form shapes. Allow to cool completely. Attach decorations using icing-- various candies, strips of fruit roll-ups, and thin licorice rope. This is fun at Halloween and Christmas time, to make fun themed treats!
