All-Natural Peanut Butter Cookies
1/2 cup unsalted butter, softened to room temperture (not melted)
1/2 cup creamy Peanut Butter
1/2 cup dry honey granules (can substitute white granulated sugar)
1/2 cup Sucanat sugar (can substitute 1/4 cup pure honey)
1/2 tsp. baking soda
1/2 tsp. aluminum-free baking powder
1/4 tsp. sea salt
1 whole large egg
1/2 tsp. pure vanilla extract
1-1/4 cups whole wheat flour
In a large bowl, beat softened butter and peanut butter on high speed for 30 seconds. Add dry honey granules (or granulated sugar), Sucanat sugar (or honey), baking soda, and baking powder. Beat until well combined, scraping down the sides. Beat in egg and vanilla until combined. Gradually add in flour. If still too wet, add a 1/4 cup more flour.
Cover mixture and chill for 1 hour in refrigerator.
Preheat oven to 375 degrees F.
Shape dough into balls, about the size of a walnut. Place each ball 2-inches apart on an ungreased cookie sheet. Lightly flatten the tops of each ball, using the tines of a fork, making crisscross marks. Dip fork in flour, if dough is sticking to fork.
Bake, uncovered, for 7 to 9 minutes, or until bottoms are lightly browned. Transfer cookies to a rack to cool.

Chicken Caesar Pizza
1 large (16") pre-made pizza dough or homemade dough recipe
2 Tbs. olive oil
1 Lb. (about 2 breasts) boneless, skinless chicken breasts, cut into bite-size
Sea salt and ground black pepper, to taste
2 cups freshly shredded Parmesan cheese
2 cups shredded lettuce
1/2 cup garlic-flavored croutons, crushed
3/4 cup Caesar Dressing, divided
Preheat oven, according to temp. stated on your dough package. Place rolled out dough onto a greased pizza pan.
If using raw dough or homemade recipe: Pre-cook the raw pizza dough partially, prior to applying the toppings. This avoids the crust from getting under-cooked or soggy. I usually cook it at 400 degrees, for about 8-10 minutes. Then apply my toppings and cook for an additional 15 minutes, at 400 degrees F.
If using pre-made, already cooked pizza crust: Just apply your toppings and cook according to package directions.
Heat oil in a large pan, over medium heat. Add chicken, salt, and pepper. Cook until chicken is no longer pink. Drain any liquid and transfer chicken to a bowl. Stir in 1/4 cup dressing and mix well.
Top crust with chicken and cheese. Cook according to the instructions on your package of pre-made crust or follow the instructions on your homemade dough recipe. Cheese should be melted and bubbly.
Remove from oven and top with lettuce and crushed croutons. Drizzle 1/2 cup dressing over top and sprinkle fresh ground black pepper.

Getting Down and Dirty
So this past weekend was filled with dirt, shovels, sunburns, and sore muscles, all in an effort to continue to level a 25-foot area in our sloped backyard, for our new above ground pool! Slowly, but surely, it's coming along. I couldn't bare to watch my husband dig away, while I enjoy an iced tea on the deck (although tempted to do so!). So, I jumped in and got dirty too! I gotta say ladies, typically when you get involved in your husband's projects, it actually tends to motivate them even more! Sure, we could of had this done in one day, if I was willing to pay to rent equipment. Just can't see forking over $250+, when we have two perfectly good hands...regardless of our new blisters. Besides, we made good progress together. Now time to figure out who will massage whos feet :)

Homemade Hot Pockets
DOUGH:
1 1/2 cups hot water
1/3 cup olive oil (plus additional for brushing on later)
1/3 cup honey
2 tsp. sea salt
1 egg
2 Tbs. Lecithin, optional (it's a dry soy powder that makes breads softern texture)
4-6+ cups whole wheat or hard wheat flour, divided
1 Tbs. INSTANT yeast
FILLINGS:
*Make any combination you want!
Pizza Pockets
pizza sauce
mozzarella cheese
dry Italian seasoning
Turkey Pesto Pockets
pesto sauce
sliced turkey
monterey jack cheese
BBQ Chicken Pockets
BBQ sauce
cooked shredded chicken
cheddar cheese
Ham & Swiss Pockets
spicy brown mustard
sliced ham
swiss cheese
Mexican Pockets
salsa
cooked ground beef
cheddar cheese
To Make Dough:In a large bowl, combine the 1/3 cup oil, honey, salt, and egg with a large wooden spoon. Stir in hot water. Then, stir in 2 cups of the flour and lecithin. Add yeast and enough of the remaining 2 cups of flour (may need to add more) to make soft dough, but not sticky.
Knead dough until smooth and elastic for about 5 min. adding more flour if too sticky. Let dough rise, covered in a large bowl, in a draft-free location, until double in size (could take a couple of hours).
Once dough has doubled, transfer dough to a counter top. Punch dough down until flat. Cut dough into 20-24 equal pieces. Roll each piece into a ball, then roll out flat into a circle using with a rolling pin, to desired size.

Spoon your "sauce" of choice to one side of the dough, leaving space around the edges. Top with meat and cheese. Don't over-fill, as the dough will puff up and expand during cooking. Fold over other side of dough and crimp edge with a fork to seal.*Make sure crimped all the way through, or fillings will come out while cooking!
Transfer pockets to a greased baking sheet. Lightly brush the top of each pocket with oil. Bake, uncovered, for 15 minutes or until golden brown.
Serve with additional sauce, for dipping.
Tip: Make a double batch of dough and once it is risen, punch it down, and divide it into two equal parts. Place each dough section in a sealed freezer bag. When you are ready to use it, place the bag in your refrigerator overnight to thaw. Then, when you want to make a batch of these yummy hot pockets, your dough is already done! You can also use one of these dough bags to create a Homemade Pizza!

Choosing Sunglasses Based On Your Face Shape
With Summer almost here, many of you will be on the hunt for new sunglasses. While shopping, there are some things to consider, to ensure you end up with a pair that will flatter your face shape! To determine your face shape, pull all of your hair back into a ponytail or clip. Stand in front of a mirror and trace the outline of your face onto the mirror using something removable (ex. a bar of soap or washable marker). Next, stand back and look at the shape that you drew. Who knew there were so many face shapes!?
Round-Shaped Face: (Cameron Diaz or Oprah Winfrey)
A round face is as wide as it is long with rounded edges. Look for wider frames with angular or rectangular styles that do not extend past your cheekbones. Look for frames equal to or slightly wider than the broadest part of the face. Sunglasses with brow bars also pull the eye upward, making the face appear longer. Frames should make the face appear longer and thinner.
Oval-Shaped Face: (Jessica Alba or Heather Locklear)
This face shape is similar to an hourglass shape. Any frame looks good on this shaped face, but square shaped frames with rounded edges and higher temples will add more angles.
Oblong-Shaped Face: (Sarah Jessica Parker or Hilary Swank)
This long and narrow face can appear fuller with glasses that do not extend beyond the widest part of your face. Stick with round or square styles.

So yesterday we went down to the VA Beach area, where the kids did their end-of-year homeschool testing. Apparently I am doing something right, as they are both testing way above their grade level :) Whoo-hoo, let the summer vacation begin! While there, we decided to treat them to a visit to the Children's Museum! Lot's of laughs and silliness filled the day...here are a few candid pictures!

Patience Pays Off
I just love generous people! They seem to be few and far these days! Little do they know that sometimes their blessing to others is bigger than they could imagine. Today, my husband came home for lunch, strolling up to the front door with a big model ship in his hands. Not something I see everyday! Two thoughts came to mind-- he has waaay too much down time on the job, or he just found a good deal. He knew he had made mama proud when the words, "Look what I got for free", escaped his mouth, bringing a big smile to my face. Free! *Ahhh, let me just bask in it for a moment*. He went on to tell me that he was doing a job at a house this morning and spotted an old, dusty model ship down on the floor behind their piano. He commented to the homeowner that we had recently transformed one of our rooms into an office, with a Old World Nautical theme. He mentioned that we would eventually be getting a ship like that, to complete the space. Without skipping a beat the homeowner told him to take it and that they had it for years and didn't use it anymore. He said shock came over his face, as he was prepared to atleast make her a small offer on it. But, she insisted he just take it.
It amazes me how often blessings seem to come, when we just have patience. I really think that God knows the desires of our heart, and quite often fulfills those wishes in His timing, not ours. We had longed to buy a large ship for the office, yet haven't had $200+ for a ship that size. Instead of being irresponsible with our money, we decided it best to just wait (that is the frugal side of me). The problem is that waiting can be a very, very long game to play. But once again, a true blessing came out of it! If only that homeowner knew that her generosity was much more than just "getting rid of something that was in her way", yet truly giving to someone at just the right time. (I sent her a thank you card today, letting her know that). For anyone out there currently playing the "waiting game", whether it be a new job, starting a family, or just a break in life, know that your ship will come in too. I encourage you to rely on God's time, as His timing is always perfect.

Instead of being irresponsible with our money, we decided it best to just wait (that is the frugal side of me). The problem is that waiting can be a very, very long game to play. But once again, a true blessing came out of it! If only that homeowner knew that her generosity was much more than just "getting rid of something that was in her way", yet truly giving to someone at just the right time. (I sent her a thank you card today, letting her know that). For anyone out there currently playing the "waiting game", whether it be a new job, starting a family, or just a break in life, know that your ship will come in too. I encourage you to rely on God's time, as His timing is always perfect.
