Tator & Bacon Breakfast Tacos
This hearty and tasty dish will leave you begging for more!
16 Fajita-size flour tortillas, warmed
12 whole large eggs
2 Tbs. milk
2 cups sharp cheddar cheese, shredded
1/2 of a 28 oz. bag frozen Extra Crispy Tator Tots
8 slices turkey bacon
Salsa, to taste
Sea salt and ground black pepper, to taste
Hot sauce (optional)
Cook up the tator tots, according to package directions.
While those are cooking, fry up the bacon slices in a pan or griddle, over medium heat, until crispy. Transfer bacon to a paper towel-lined plate. Cool slightly, chop, and set aside.
Meanwhile, in a medium size bowl, whisk together eggs, milk, salt, and pepper. Cook until scrabbled in a medium pan, over medium heat.
Once tator tots are done, immediately assemble the tacos-- Take a warm tortilla and place a scoop of scrabbled eggs inside. Sprinkle with a large pinch of shredded cheese (the warm eggs will cause the cheese to melt). Top with 4 tator tots and a few pieces of chopped bacon. Drizzle salsa over top. Splash with hot sauce, if desired.
Makes 16 tacos

How many of you get annoyed by solicitors? Ever since we began displaying a "No Soliciting" sign, our door rarely gets knocked on. Okay, occasionally we get that one person who evidently can't read! I went with the aluminum sign, as it is sturdy and will withstand wear and tear from the weather. We drilled holes in it and mounted it to a tree near our walkway. Conquering Summertime Boredom
Summertime--Aaahh, the sunshine, swimming, BBQ's...and kids repeating, " I'm bored" throughout the day! Before you kick off your summer, be sure to ward off boredom by having your kids make a simple list of activities. Post the list on your refrigerator, so when they begin to express their boredom, you can redirect them to select an activity. These would be things they enjoy doing, and often don't think to do. Then again, it's amazing how quickly they can find something to do, when you give them the alternative to do chores instead! Here are a few things to get you started:
1. Make a fort out of cardboard boxes or sheets
2. Draw outside with chalk
3. Collect bugs
4. Garden
5. Make a scrap-book of everything you do during the summer
6. Make a treasure map or scavenger hunt for your backyard
7. Play in the water--pool, sprinkler, water guns, balloons, buckets
8. Make paper airplanes and see which goes the furthest
9. Make birthday cards for family members for the whole year
10. Make up a board game, using household items
11. Have a picnic
12. Sketch a picture of your house from the outside
13. Help an elderly neighbor with yard work
14. Make an obstacle course in your backyard

Okay, so the tip I am about to share with you is not rocket science, but it is also something I hadn't thought to do until my husband suggested it. As most of you know, based on my blog posts, I am constantly signing up for samples, giveaways, contests, and anything else that will get me free stuff. With that said, each thing I sign up for typically requires some sort of email address. There is a reason for that. Most companies will give consumers free stuff, because it gives them access to solicit a new customer base later. You can see how my inbox would fill up rather quickly with information I don't want! Sure, I could just 'unsubscribe' to each thing that comes through, but even that can be a hassle.
The solution? Create a free secondary email account. This would be an account that you solely use for things that you don't want updates on. However, I don't recommend that you use it for giveaways that you've entered, as you may end up missing an email announcing that you won. I have come across a few sample requests that want you to 'confirm your email', by clicking a link in your email account, in order to get the freebie. If that is the case, most companies will give you that heads up upon completing your request. In that case, I do go over to the secondary account and quickly click on the link. The purpose of the secondary account is to reduce unwanted spam. So, use caution when giving it out, so you don't find yourself having to check two email addresses on a constant basis.

Update on Sophie: Our New Stray Dog

What keeps us going with her, even through the frustrating moments? Passion and compassion. I believe that a dog is never too old to learn new tricks. With consistent training and a big dose of patience, she will slowly begin to realize what she can and cannot do within our household. She is sweet as all get-out, obeys general commands, and more importantly has a lot of love to give. She is also making great progress with her health. She has already gained 3 pounds! Today is the last day of her heartworm treatments, leaving her sore and not feeling well. Once she has healed, we will work on socializing her more with our other dog, Ginger. For now, they have seized barking at each other, and actually wag their tails when smelling each other through the gate. It is a slow moving, yet rewarding process. So blessed that God crossed our paths when he did!

Saving Sophie: Our Rescue Story

Have you ever had a moment where you reflect on events that just took place, and it suddenly hits you that everything lined up the way it did for a purpose? Yeah, I just experienced one of those moments myself! It started with me putting a simple task on my 'to-do list', last week. The task was to wash my dog Ginger. Each and every day that task got pushed back another day, due to time and the fact it rained a lot. Now let me jump over to a completely different event. Out of the blue last week, I decided to approach my husband with the idea of selling his car. He has a work vehicle, and his Rodeo has not been used on a regular basis for almost a year. My goal was to sell it and use the proceeds to reduce debt. He agreed it was a wise decision, and we decided to let friends and family know about it, waiting to advertise it to general the public. Within 24 hours it was sold to a friend of mine. Now with all of that said, let me fast forward a couple of days....
It was Sunday, July 15, 2012. We came home from church and I decided to run a couple quick errands, then jumped on the riding lawn mower to get the yard cleaned up. Since I was sweaty and dirty, I decided it was a good time to finally wash the dog. Upon bringing Ginger out onto the back deck, she bolted to the fence, barking nonstop. I immediately scanned the area to see what all of the ruckus was for. There, on the other side of the wooden picket fence, was a medium size dog. She was slowly walking along the fence, gazing into the yard. I found it odd that Ginger's presence was not scaring her off, as Ginger is known to make grown men take off for the hills! I went into my "rescue mode"-- Does the dog have a collar, is it injured, what is its temperament? As I approached her, I discovered that she did not have a collar, was not injured, and appeared to be rather sweet, yet skiddish. I knelt down beside her, on the other side of the fence and she hesitantly moved closer to my hand. I noticed she was infested with ticks, as one clung to her face as I pet her. Signs of malnutrition were evident, as her ribs and backbone protruded from underneath her fur. With Ginger still barking in the background, I yelled out for my son to put her in the house. I then quickly ran in to get a bowl of water and a leash. To my amazement, the dog was still there when I returned. I carefully wrapped the leash around her neck and escorted her through the fence, into our backyard. Once there, my husband called out, "Jenn, what are you doing?" He knew the dogs presence meant only one thing...I was determined, which normally results in a full blown rescue mission. After removing over 20 ticks, a flea bath, some food, and water, we decided to pull out our large crate and talk about our next course of action.
We asked the surrounding neighbors if they could identify her. We then searched databases and called local agencies, for any signs of a "Missing Dog", that fit her description. No luck. As the day turned into evening, we stood there, hovering over her crate, throwing out scenarios, options, and her ultimately her fate. The decision had been made, that we would keep her over night, and get her to the vet by morning. We set a cost we were willing to spend, in order to bring her back to health, as we suspected she had heartworm (Ginger also had it, when we found her as a stray back in 2006). In the mean time we were getting tired of calling her, "Hey dog", so we named her Sophie (thanks to my sister who thought I said "Sophie", when I actually said "her ears are filthy", when talking about the dog over the phone.) The next morning we were at the vet to scan for a microchip. Again, nothing. If that was the case, we knew we would be moving forward. Several tests later it was discovered that she did indeed have a weak case of heart worm. I sat nervously, as we suspected this would be the case, which can be very costly. I slowly reached out for the paper that held the final estimate. As my eyes gazed upon the final number, delight filled my heart. The cost was close to, yet still under, the price we had set. Basically, had the cost been too horrific, we would of been faced with the decision of surrendering her to animal control, which would of euthanize her because of the heartworm detection. We were finally on our way home, with a hefty bill, a bag full of medications, and an appointment to return in a week, for the heartworm treatment. For those who don't already know, to treat a dog for heartworm is an aggresive treatment done by "poisoning" the dog, enough to kill off the worms surrounding her heart, yet not enough to kill her. If left untreated, the worms constrict the dog's heart, ultimately leading to death. If you have a dog, make sure you have them on a monthly heartworm preventative, such as Heartguard or Interceptor. You can only get this through your vet. It will not only saving you lots of money in the long run, but save your dog's life as well!
Now two days later, her ticks and fleas have been treated, she is no longer eating her food as if it is her last meal, and she wags her tail when we enter the room. With each interaction, her trust in us becomes stronger. We still have a long road to travel, recovering from her upcoming treatment, socializing the two dogs, and teaching Sophie the rules of the house. Some may ask, "Is it really worth it?" One look into her eyes confirms we did the right thing, as they express, "Thank you, I am grateful."
So, back to the beginning of my story.....the delay in washing my dog and the random sell of our car. Sophie would not be were she is currently at, if those two things never happen. For one, I wouldn't of been outside to see her in the first place. Plus, had the car not sold, we would not of been able to afford the medical costs to treat her. I believe everything happens for a reason, and sometimes God places events at unexplainable times, because in the end it completes His master plan for our lives. Although we felt compelled to help Sophie, we were sure to seek God's direction first. We feel that the cost coming in below projected, was a good sign to move forward. We now trust that He will take care of the unknown. I encourage you to listen to that "gut feeling", as often that is God speaking to you. I also encourage you to pray about any decisions that you are unclear about. Then, be willing to listen, obey, and respect the answer He gives you. Trust me, I have had a lot of strays cross my path over the years, and only a handful have been impressed on my heart to the point of rescuing them. At times I wonder if the animals have a map posted some where, directing them to my house! I'd save them all if I could :)

Strawberry, Goat Cheese, & Walnut Salad w/ Raspberry Vinaigrette
The goat cheese gives a creamy, rich contrast to the
sweet strawberries and tangy dressing!
5 oz. bag Spring lettuce mix
1 cup fresh strawberries, sliced
2 to 4 oz. fresh goat cheese, crumbled (depending how strong you like it)
1/4 cup chopped walnuts
1 small red onion, thinly sliced
1/2 Tbs. olive oil
Raspberry Vinaigrette:
2 Tbs. Raspberry Vinegar
1/4 cup olive oil
1/4 tsp. fresh squeezed lemon juice, seeds removed
1-1/2 tsp. pure honey
1/4 tsp. sea salt
Few dashes black ground pepper
Heat 1/2 tablespoon of oil over medium heat. Saute onions, until really soft. Set aside to cool slightly.
In a small sealable container, mix all the ingredients for the Raspberry Vinaigrette. Shake well to combine.
In a large bowl, combine the lettuce, strawberries, goat cheese, walnuts, and cooked onion. Toss gently. Shake dressing again and drizzle over salad mixture, to taste. Toss to coat. Serve immediately.

Go Ahead...Call Me a Heifer!

I was really hoping I got the date right, or this night could of gone terrible wrong. It was amusing to watch other drivers stare at us, as we passed them on the road. Especially since I was dancing to Justin Bieber, while driving. I looked like I had Mad Cow Disease! Chick-fil-A was packed, full of cows, young and old. There was a large dance team of teenagers from another city, in front of us in line. They kept staring at us and finally one of the girls asked me, "So, is this place pretty popular in your city", as she looked me up and down a few times. It dawned on me that she had no clue why so many people were dressed up. She honestly thought we were really into Chick-fil-A. A sense of relief came across her face, when I told her it was a special event. Made me laugh! Anywhoo, we ate $25 worth of free food, had fun watching all the people come and go, and got to be silly for the night! Good times, good times indeed.
